What a field review covers
For multi-location restaurant operators, a field review is a planned visit to a sample of sister kitchens during the dayparts that matter to your concept. We observe seating flow, kitchen pass timing, and how waste is recorded at the end of service. Notes stay short and specific so managers recognize their own outlet.
Typical visit rhythm
- Arrive before the peak and walk the floor with the shift lead.
- Watch one full rush at the pass without interrupting tickets.
- Review waste and labor sheets with the manager after service settles.
- Capture corridor and delivery context that explains cover gaps.
After the visits
Field notes feed the Multi-Location Performance Review scorecards. Outlets that were not visited still appear in the tables using the same daypart cuts; visits explain outliers rather than replace the full comparison.
